Johno's Steamed Crawdads Recipe ~ quick & easy!
Ingredients:
2 - 1LB. packages of fully cooked & cleaned crawdads
( I buy mine at Wholey's)
4 cups of water
4 oz. beer
4 oz wine
(Beer and wine can be substituted with apple cider or orange juice-
pick any two)
3 springs of fresh dill
1 orange quartered
1 lemon quartered
2 cloves of garlic
1/4 teaspoon ground or fresh ginger
Toppings:
1 stick of butter- melt in microwave about 20 seconds
squirt of lemon juice, herbs or spices of choice, anything with garlic is good!
mix into butter dip crawdads, or drizzle over
zesty coctail sauce also good topping or dip
Thaw crawdads prior to steaming by running under warm water
In bottom of steamer pot combine all ingredients except crawdads and toppings, bring to boil and cook for 2 minutes.
Place insert down inside pot, add crawdads and steam for 2 minutes.
Serve with zesty cocktail sauce and hot flavored butter! Yum! Yum!
